Family Recipe

In early 1920, my grandfather, Hasan, left his small village of N’ilin to work at a falafel restaurant in the port city of Yafa. He learned the trade quickly and made some of the best falafel and hummus in town.
My grandfather moved on to be a chef for some of the Jordanian diplomatic missions around the world. He traveled around the world, cooking Middle Eastern specialties and learning about other food cultures from different countries.
My grandfather told me that the secret to good food is good ingredients. Always using fresh and high-quality vegetables and meats was his advice, which I followed all my life.
